This sun dried tomato bacon guacamole recipe is my current snack addiction. All our toppings come together for the perfect sweet, salty, crunchy, tangy, creamy bite!

Okay can we be honest here guys? I have watched exactly 0 football games in my life in their entirety. My family grew up without football and my hubby doesn’t watch sports at all. So the real reason I’m so excited? The food of course!
I live vicariously through all my friends who are so passionate about this day and I take advantage of the fact that all my fellow food bloggers make the best snacks this time of year!
I have been dying to share this recipe with you since early last year (so silly it took so long I know!). I went up to Portland for the Indulge conference and the California Avocado Commission had this epic guacamole making competition. Basically we all were split up into teams and had to rapidly come up with a plan for dashing up to the front of the room and grabbing a single ingredient per person.
This combination was our teams pick and it is seriously so addicting. Here is the run down of what is inside:
Chopped sundried tomatoes (sounds weird but trust me on this one), minced jalapeños, minced onion, crunchy bacon, onion, garlic, minced cilantro and of course tons of gorgeous mashed avocados with plenty of salt and lime juice.
The sundried tomato is probably the most unique thing in this guacamole and let me tell you….it steals the show. It’s subtle but just the right bit of sweet chewy pops in the midst of this creamy zingy guacamole. Every time I serve this people are digging into it like mad and ask me for the secret ingredient and they are surprised.
Oh and if you can find Juanita’s tortilla chips near you they are hands down our favorite tortilla chips. I think they are just a west coast thing right now though, I cried when I we moved to Georgia a few years ago because I couldn’t find them anywhere.

- 4 ripe avocados mashed
- 4 pieces of crunchy bacon chopped
- 1/2-1 lime juiced to taste
- 1 clove garlic minced finely
- 1/2 onion finely chopped
- 1/4 cup minced sun dried tomatoes
- 1/2-1/14 cup minced jalapeño
- 1/4 cup cilantro chopped
- salt and pepper to taste
1. Mix everything together. Serve with tortilla chips. Enjoy!
